Born and raised in Sicily, Paolo Gatto grew up surrounded by the aromas of traditional pasticcerie and the warmth of family kitchens. His grandmother’s cannoli recipe, passed down through four generations, became the foundation of his passion for authentic Sicilian pastry.

After training in some of Sicily’s most prestigious bakeries, Paolo Gatto brought his expertise to Australia in 2012, determined to share the real taste of his homeland with a new continent.

Through SYDCILY Academy, Paolo Gatto now shares his knowledge with professional bakers, creating video tutorials and guides that preserve and spread authentic Sicilian techniques across Australia.
